Healthy and Refreshing Summer Recipes

1. Watermelon and Feta Salad

Ingredients:

- 4 cups cubed watermelon

- 1 cup crumbled feta cheese

- 1/2 cup fresh mint leaves, chopped

- 1/4 red onion, thinly sliced

- 2 tablespoons olive oil

- 1 tablespoon balsamic glaze

- Salt and pepper to taste

 

Instructions:

- In a large bowl, combine the watermelon, feta, mint, and red onion.

- Drizzle with olive oil and balsamic glaze.

- Season with salt and pepper.

- Toss gently to combine and serve immediately.

 

2. Grilled Chicken and Veggie Skewers

Ingredients:

- 2 boneless, skinless chicken breasts, cut into 1-inch cubes

- 1 red bell pepper, cut into chunks

- 1 yellow bell pepper, cut into chunks

- 1 zucchini, sliced

- 1 red onion, cut into chunks

- 2 tablespoons olive oil

- 2 cloves garlic, minced

- 1 tablespoon fresh lemon juice

- 1 teaspoon dried oregano

- Salt and pepper to taste

- Wooden or metal skewers

 

Instructions:

- In a bowl, mix olive oil, garlic, lemon juice, oregano, salt, and pepper.

- Add chicken and veggies, tossing to coat. Marinate for at least 30 minutes.

- Preheat the grill to medium-high heat.

- Thread chicken and veggies onto skewers.

- Grill for 10-12 minutes, turning occasionally, until chicken is cooked through.

Instructions:

- In a blender, combine cucumbers, avocados, Greek yogurt, garlic, lime juice, cilantro, and cold water.

- Blend until smooth. Season with salt and pepper.

- Chill in the refrigerator for at least an hour before serving.

- Garnish with diced tomatoes and cilantro if desired.

 

4. Quinoa and Mango Salad

Ingredients:

- 1 cup quinoa, cooked and cooled

- 1 ripe mango, diced

- 1 red bell pepper, diced

- 1/2 red onion, finely chopped

- 1/4 cup fresh cilantro, chopped

- 1/4 cup fresh lime juice

- 2 tablespoons olive oil

- 1 tablespoon honey or agave syrup

- Salt and pepper to taste

 

Instructions:

- In a large bowl, combine quinoa, mango, bell pepper, red onion, and cilantro.

- In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper.

- Pour dressing over the quinoa mixture and toss to combine.

- Serve immediately or chill for later.

 

5. Berry and Spinach Smoothie

Ingredients:

- 1 cup fresh or frozen mixed berries (strawberries, blueberries, raspberries)

- 1 banana

- 2 cups fresh spinach leaves

- 1 cup unsweetened almond milk

- 1 tablespoon chia seeds

- 1 teaspoon honey (optional)

 

Instructions:

- In a blender, combine berries, banana, spinach, almond milk, chia seeds, and honey.
